Ingredients:

For the Sugar Syrup:

  • 1 cup Sugar
  • 1/2 cup Water
  • 1/4 teaspoon Cardamom Powder

 

For the Dough:

  • 1 cup Besan (Chickpea Flour)
  • 1/2 cup Ghee (Clarified Butter)
  • 1/4 cup Water
  • 1/4 teaspoon Cardamom Powder

 

For Garnishing (optional):

  • Slivered Almonds and Pistachios

 

Preparation:

Step 1: Making the Sugar Syrup

  • Begin by making the sugar syrup. In a saucepan, combine sugar and water. Heat it over medium flame.

 

  • Stir occasionally until the sugar dissolves completely. You don't need to achieve a thick consistency; just ensure the sugar is fully dissolved.

 

  • Add cardamom powder to the sugar syrup for a delightful aromatic touch. Let it simmer for a few more minutes.

 

  • To check if the syrup is ready, take a drop of it between your thumb and index finger. It should form a single thread when stretched apart. This is the right consistency.

 

  • Turn off the heat and keep the sugar syrup aside.

 

Step 2: Preparing the Dough

  • In a heavy-bottomed pan, add ghee and let it melt over low-medium heat.

 

  • Once the ghee has melted, add besan (chickpea flour) to it.

 

  • Continuously stir the besan in the ghee to avoid lumps and ensure even roasting.

 

  • Keep roasting until the besan turns golden brown. This process releases a nutty aroma, indicating that the besan is well-cooked.

 

  • Add water to the roasted besan and mix thoroughly. This will form a smooth, lump-free mixture.

 

  • Cook this mixture for a few more minutes until it thickens and starts leaving the sides of the pan.

 

Step 3: Creating the Flaky Texture

  • Grease a plate or tray with a thin layer of ghee.

 

  • Pour the prepared besan mixture onto the greased surface.

 

  • Using a rolling pin, gently flatten the mixture to your desired thickness. Be careful not to press too hard, as you want to maintain the flakiness.

 

  • Let it cool for a couple of minutes.

 

Step 4: Cutting and Garnishing

  • Once the mixture has slightly cooled but is still pliable, cut it into square or diamond-shaped pieces using a sharp knife.

 

  • If desired, garnish the pieces with slivered almonds and pistachios. Press them gently onto the surface.

 

  • Allow the Soan Papdi to cool completely.

 

Step 5: Storing and Serving

  • Once completely cooled and set, carefully remove the pieces from the tray.

 

  • Store in an airtight container to maintain the flaky texture.
